This wine is a joyful tribute to Mendoza—its vibrant culture, bold flavours, and buzzing street life. Spend a day in this lively Argentine city and you’ll be swept up by its energy and colour. Pablo y Walter was born from that spirit—a bright, expressive Malbec that’s as much about friendship as it is about flavour.
The wine is the creation of two long-standing friends: renowned Argentine winemaker Walter Bressia and our own Guillaume Letang of Boutinot. ‘Pablo’ gives a nod to our original founder, Paul Boutinot. Together, this collaboration celebrates years of shared stories, laughter, and passion for winemaking.
Production Details
Grapes are sourced from 25-year-old vines grown in the Uco Valley, nestled in the rain-shadow of the Cordón del Plata, near Walter’s family-run bodega. To retain maximum freshness and fruit purity, the Malbec is vinified entirely in stainless steel. In fact, Walter went so far as to install three gleaming new 25,000-litre tanks just for this project—an impressive feat considering the size of his modest cellar!
Tasting Notes
A bold yet refined expression of Malbec. Deep red with an almost purple hue, this wine bursts with aromas of violets, redcurrants, and blackcurrants. On the palate, it’s rich, velvety, and full of Latin flair—vibrant, juicy, and unapologetically delicious. Muy fantástico, indeed.
Food Pairing
Made for grilled meats and bold flavours. Pair it with a juicy steak or churrasco de chorizo marinated in garlic, parsley, and olive oil. Grilled vegetables with chimichurri sauce are a perfect match too. For a twist, serve it lightly chilled—yes, really. It’s a game-changer.
