PRODUCTION
Crafted in the sun-drenched coastal region of southern France, Ordinal Cabernet Sauvignon is a modern expression of a classic grape variety. The Côtes de Thau appellation benefits from Mediterranean influences, with cooling sea breezes and limestone-rich soils that add structure and freshness to the wine. This makes it a versatile and food-friendly red that punches above its weight for everyday enjoyment.
TASTING NOTE
Works with a range of dishes, from classic robust beef, game and lamb roasts or stews right through to well aged farmhouse Cheddar.
Deep ruby red with garnet reflections, indicating youth and vibrancy. Aromas are expressive and ripe, offering a generous bouquet of blackcurrant, blackberry, and dark cherry. Subtle notes of dried herbs, graphite, and a touch of green pepper nod to its varietal character. Hints of vanilla and spice suggest minimal oak influence or aging in stainless steel with oak staves.
Medium-bodied, balanced and refreshing, smooth, fine-grained, and well-integrated, Black fruit leads the palate – cassis, plum, and ripe cherry – supported by secondary notes of cocoa, tobacco leaf, and a whisper of clove. The mid-palate is juicy and rounded, with just enough grip to hold its own with food.
