Working closely with experienced growers, One Chain sources premium fruit from well-established regions, crafting wines that are known for their vibrant freshness and authentic expression.

The Character Series, including wines like this Googly Chardonnay, benefits from the same high-quality fruit used in Thistledown wines. Inspired by Australia’s national sport of cricket, the name "One Chain" refers to the length of a cricket pitch—22 yards. These wines are not only approachable and enjoyable but also offer an elegant and restrained style, showcasing both varietal character and the distinct terroir.

Viticulture

The grapes are harvested by machine in the cool of the night from carefully selected vineyard sites across South Australia, ensuring they arrive at the winery with minimal temperature fluctuations.

Winemaking

To preserve freshness, the fruit is harvested in the cooler evening hours and promptly transported to the winery where it undergoes de-juicing with minimal skin contact. The winemaking process focuses on reducing phenolic extraction to limit the need for fining. Fermentation takes place in stainless steel tanks at controlled temperatures. The wine is bottled shortly after fermentation to retain its youthful vibrancy.
