For the past two decades, we have been crafting wines in the untamed landscapes of southern France, embarking on journeys of exploration and rediscovery. Mont Rocher Vieilles Vignes Rosé, IGP Pays d'Oc, France adventures have taken us from the rolling foothills and valleys beneath the iconic Pyrenees, through dramatic gorges, and out to the sun-drenched Mediterranean coast. 

Along the way, we have collaborated with skilled growers - dedicated custodians of the land who have refined their craft over generations. Their passion and the extraordinary places they cultivate are at the heart of our winemaking.

At Terres Fidèles, our wines embody the spirit of this remarkable region. We focus on old-vine varieties such as Grenache, Carignan, Malbec, Cinsault, and Viognier, producing small-batch wines that reflect the wild beauty of their origins.

Viticulture

Our Cinsault grapes are sourced from carefully selected vineyards in the heart of the Languedoc, between the Black Mountains and the Canal du Midi. This area is renowned for producing some of the finest Cinsault, showcasing exceptional purity of fruit and a distinct ‘goût de terroir’.

Winemaking

Throughout August, our team closely monitors the vineyards to determine the optimal moment for harvesting. After picking, the grapes undergo a short maceration on their skins to achieve a delicate pink hue before being gently pressed. The juice is then fermented at a low temperature in stainless steel tanks to retain its fresh and vibrant character.

Tasting Notes

Pale and elegant in colour, this Rosé is bursting with aromas of white flowers and raspberries. The palate offers flavours of ripe white peach, cherries, and a touch of grenadine, leading to a crisp, refreshing finish.

Food Pairing

This versatile Rosé pairs beautifully with classic Mediterranean dishes - try it with tapenade, salade Niçoise, seafood paella, or grilled meats such as chicken, fish, or herb-infused lamb.
