Boutinot’s Samantha Bailey believes that the ideal Provence rosé should achieve a perfect balance of florals, berry fruit, spice, body, and finesse, while also displaying a beautifully enticing shade of pink.
Upon discovering ten different cuvées of Provençal varieties within a single cellar, she saw an opportunity to craft this distinctive style of rosé. By carefully experimenting with different grape varieties in varying proportions—within the flexible regulations of the Côtes de Provence appellation—she perfected the blend to create Cuvée Edalise.
Viticulture & Winemaking
The final composition of Grenache, Cinsault, and Rolle may seem conventional, yet the diversity of vineyard locations imparts unique characteristics to each component. For example, Grenache, which dominates the blend, offers vibrant red berry fruit when grown in coastal areas, while grapes from rockier, limestone-rich soils contribute delicate white peach notes. Cinsault introduces subtle spice and a hint of herbaceousness, while Rolle adds delicate floral aromatics of orange blossom and mandarin.
Samantha’s expertise lies in sourcing and blending these elements to create a wine that achieves both harmony and finesse. The result is a rosé with a long, elegant finish and the ethereal, delicate colour expected of a top-tier Côtes de Provence rosé.
Tasting Notes
A beautifully crisp and refreshing Provence rosé, as it should be. Delicately pale salmon pink in colour, with enticing notes of white peaches, redcurrants, and mandarin.
Food Pairing
A well-chilled Provence rosé is an excellent food companion. This Edalise rosé pairs naturally with fresh seafood but also complements more flavourful summer dishes such as salade niçoise or feta and spinach tart.
