Producer Profile

The Biscardo family has been producing wine from their base in Soave for over 150 years and is currently led by brothers Maurizio and Martino.

Throughout Maurizio’s long and illustrious career, he has consulted for well-known wineries across Italy. During this time, he discovered the vineyards that now produce their Puglian wines. Both their Pugliese and Veneto wines are distinguished by their irresistible drinkability, aromatic purity, and outstanding value for money.

Viticulture

The vineyards are located near Barbarano, close to the Euganean Hills and Abano, a region globally renowned for its thermal wellness centres, thanks to its sulphurous and curative waters. Pinot Nero has been cultivated here for over 20 years, benefiting from the area's rich soil, which retains humidity overnight while allowing efficient drainage during rainy periods.

The region's volcanic history has enriched the soil with minerals and clay, imparting unique characteristics to the grapes. These qualities contribute to Rosapasso’s distinctive bouquet complexity, smooth palate, and perfect balance. This Pinot Nero rosé is a structured, fresh, and inviting wine with a long, savoury finish. The vines are trained using the spurred cordon and Guyot system.

Winemaking

The grapes are gently pressed, yielding pure free-run juice, and undergo maceration on the skins for 10 hours to extract colour. Before fermentation, the grapes undergo cryomaceration at a temperature of 5–6°C, enhancing the extraction of primary aromas directly from within the skin.

This process ensures well-defined, delicate, and fruity aromas. Fermentation takes place in temperature-controlled stainless steel tanks, followed by additional ageing in stainless steel for a few months, allowing the wine to refine on its own yeasts.

Tasting Notes

A brilliant rosé colour with an elegant bouquet of wild strawberries and cherries, leading to a smooth and harmonious palate.

Food Pairing

Excellent with fish, cheese, and delicately flavoured risottos and pasta dishes.
