Producer Overview
The Biscardo family has been crafting wines for over 150 years, with their base in Soave. Today, the winery is led by brothers Maurizio and Martino. Throughout Maurizio's esteemed career, he has worked as a consultant for numerous renowned Italian wineries, which led him to discover exceptional vineyards for their wines from Puglia. Their wines, from both Puglia and Veneto, are celebrated for their superb drinkability, aromatic clarity, and outstanding value.
Viticulture
The vines are cultivated at a density of 3,500 to 4,000 rootstocks per hectare, using either a simple or double espalier system. Traditional pruning methods are followed, and the annual grape yield is approximately 100 tons.
Winemaking
The hand-harvested grapes are promptly transported to the winery in the early hours of the day to prevent any skin or acetic fermentation. After de-stemming and soft pressing, the must is fermented in small stainless steel tanks at controlled temperatures. The fermentation process is partially halted through cold techniques, and the wine is then transferred into smaller stainless steel tanks under nitrogen. Following about four months of maturation, the wine undergoes re-fermentation in an autoclave.
Tasting Notes
This Prosecco is refined and aromatic, with delicate notes of apple and honeysuckle. It’s wonderfully smooth and easy to enjoy.
Food Pairing
Ideal as an aperitif, it pairs perfectly with appetisers and complements the entire meal, particularly seafood dishes.
