Producer Overview

Circle of Life White embodies Waterkloof's philosophy of farming in harmony with nature, focusing on the preservation and regeneration of biodiversity. This exceptional blend of three classic white grape varieties captures the essence of the estate’s biodynamic approach and its unique terroir.

Production

This wine isn’t defined by specific grape varieties or vineyard blocks but rather by the diverse soils, slopes, and altitudes of the biodynamic farm. The vineyards, located 200-350m above sea level and just 2 miles from the Atlantic, are all south-facing, which ensures reduced sun exposure and balanced ripening. 

These conditions lead to low yields (around 4 tons per hectare) and grapes that reflect the distinct character of their environment. Harvesting takes place early in the morning to maintain freshness, with grapes gently pressed using a modern basket press, which avoids the use of any enzymes or settling agents. After a 24-hour settling period, a portion of the juice undergoes co-fermentation in old 600-liter barrels for four months.

Once fermentation is complete, the wine is moved to stainless steel, where additional Sauvignon Blanc, Chenin Blanc, and Semillon are blended in. The wine then rests on its lees for six months before bottling, adding depth and complexity to its profile. The entire process is done as naturally as possible, with no added acids or enzymes.

Tasting Notes

A refined blend of three classic white varietals. The nose is dominated by the vibrant aromas of Sauvignon Blanc, with notes of lime and prickly pear. The Chenin Blanc contributes a taut, mineral backbone and a creamy mid-palate, while the small proportion of Semillon adds texture and richness, resulting in a long, persistent finish.
