Viticulture

Grapes for this wine are grown on medium-textured soils with a tuffaceous limestone base—deep and mineral-rich. The region experiences mild, moderately rainy winters, while hot, dry summers are balanced by excellent airflow across the vineyards, aiding in healthy ripening and flavour concentration.

Winemaking

Grapes are harvested by hand and undergo a gentle pressing to retain their freshness. Fermentation is carried out with skin contact for 8–10 days to develop optimal colour and aroma. Carefully selected yeasts and temperature control (below 28°C) ensure a clean, precise fermentation.

The wine is stored in stainless steel tanks at cool temperatures (below 20°C), under a protective nitrogen atmosphere to prevent oxidation. No oak ageing is used. Instead, the wine is matured in steel for at least six months before being bottled using an isobaric filtration process to maintain purity and freshness.

Tasting Notes

Deep ruby red with garnet reflections. The nose is rich and expressive, offering notes of violets, blackcurrant, plum jam, and a delicate hint of spice. On the palate, it’s full-bodied and round, with soft, sweet tannins and flavours reminiscent of dark fruit compote.

Food Pairing

A great match for hearty mains—try it with roasted red meats, game dishes, or strong, aged cheeses. A warming, characterful red that holds its own at the table.
